Kolkatans are better known for their taste and choice for recipe. Although Bengali dishes are very popular, yet preparations of various countries and places in India have grown popular with the cosmopolitan characteristics of the city. In this cuisine section, we are trying to figure out some very special and delicious menu that could be easily prepared at home. The recipe has been brought in here from different sources and we thank them for their cooperation in enlighten us with the special dishes.

Fish Mango Star Fry

Ingredient
· Carrot 200 grams
· White Oil 2 Table spoon
· Onion 1 large sliced
· Fish (Bhetki) 500 gms cut into moderate pieces
· Capsicum 1 Red and 1 green sliced
· Soya sauce 1 Table spoon
· Mango (ripe) 1 Large
· Cornflower 1 teaspoon
· Pineapple Juice1 100 ml
· Lemon Juice 1 teaspoon
· Dhania patta grated 10 grams
· Sugar ½ tea spoon
· Salt to taste

Preparation:

  • Carrots are to be pilled and cut into slices like the match sticks
  • Put Pan on the even, heat it and put white oil
  • Put carrots, onion slices and sliced Capsicum
  • Fry the mixes for 2 minutes
  • Put the fish pieces and further fry for 2 minutes
  • Squeeze the mango and mix the juice with the mixes and fry for another 2 minutes
  • Now add the Pineapple juice, lemon juice, cornflower, Soya sauce, Salt and sugar and mix the paste to cook with a little sprinkle of warm water for 5 minutes
  • Spread Dhania Patta as topping and serve hot on a dish.
  • You may garnish with tomato, cucumber and onion slices on the dish.

Prawn Tomato

Ingredient

  • Medium size Prawn 10 pieces (600 gms)
  • Tomato peeled 500 grams
  • White Oil 3 Tablespoon
  • Onion sliced 2 Nos
  • Garlic Paste 20 grams
  • Geera paste 10 grams
  • Sugar 1 Teaspoon
  • Tomato sauce 1 Tablespoon
  • Green Chilly peeled 4 Nos
  • Salt to taste
  • Dhania Patta grated 1 Tablespoon

Preparation

  • Heat the white oil in a pan on the oven
  • Put onion ad fry for a minute
  • Put garlic and geera paste and fry for 2 minutes
  • Add sugar, tomato slices and tomato sauce and stir
  • After 2 minutes put the prawn and stir lightly for 5 minutes so that the prawns are not torn into pieces
  • Put salt and Chilly
  • Sprinkle water and allow the mix to boil for 5 more minutes
  • Put grated Dhania patta on the top and put the preparation on a dish
  • Server hot to serve as main dish
